Mulligatawny

1 1/2 pounds lamb stew meat -- diced
4 tablespoons butter
1 onion -- minced
1 tablespoon curry powder
2 tablespoons flour
1/3 cup lentils
2 tart apples -- peeled, diced
1 bell pepper -- diced
2 carrots -- diced
1 teaspoon sugar
1/2 teaspoon ground mace
1/4 teaspoon ground cloves
Salt -- to taste
Freshly-ground black pepper -- to taste
1 cup coconut milk


Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes. Combine with remaining ingredients, except coconut milk, and 2 quarts of water in the slow cooker. Cover and cook on LOW 8 to 10 hours.

Add coconut milk, heat through, and serve with rice.
