Lamb Shanks

4 Lamb Shanks
Olive oil
1 Onion; peeled and chopped
1 Orange; grated , rind of
Salt and pepper
1 c White wine
1/2 c Water

Insert 2 or 3 slivers of garlic in each lamb shank. Brown the lamb shanks in the oil. Drain and put them in a pot that will hold the shanks. Brown the onion and ad to the pot with the shanks. Sprinkle in the orange rind, salt and pepper, white wine and water. Cover and simmer for about 1-1/2 hours.
