Saffron Lamb

8 Rolled cutlets (noisettes) or 4 thin slices of lamb from the fillet
2/3 c Single cream
1 pn Saffron powder -OR- about 10 strands of saffron
3 ts Lemon juice
3 ts Olive oil
2 tb To 3 tbsp onion; chopped

Choose 8 rolled cutlets (noisettes) or 4 thin slices of lamb frm the fillet.

Blend 2/3 cup (1/4 pint, 150 ml) single cream, a pinch of saffron powder or about 10 strands of saffron, 3 teaspoons lemon juice, 3 teaspoons olive oil and 2 to 3 tablespoons finely chopped onion in a large dish. Place the lamb in the marinade, turn over once or twice so the meat absorbs the mixture then cover and leave for several hours.

Preheat the grill and put the meat on a piece of foil on the rack. Grill steadily for 10 to 12 minutes, or until the meat is tender.
