Dijon Lamb Chops

4 Lamb chops (about 1 1/2 Lbs)
1 Lemon, cut in half
Garlic powder
Freshly-round black pepper
1 c Fresh parsley, chopped
1/3 c Dijon mustard
1 1/2 tb Wheat bran
Non-stick vegetable cooking spray
Lemon and lime slices (garnish)


Trim fat from lamb chops. Rub both sides with cut lemons. Sprinkle both side with garlic powder and pepper. Combine parsley, mustard, and wheat bran; mix well, and press on all sides of chops. Place chops in a coated 12-x 8-x 2-inch baking dish. Bake, uncovered, at 500 F for 4 minutes. Reduce heat to 350F, and bake for 15 minutes more, or until a meat thermometer registers 180F. Garnish with lemon and lime slices.

Makes 4 servings.
