Roasted Rack of Lamb with Garlic and Herbs

2 tb Dried oregano
2 tb Dried thylme
1 tb Fennel seeds
1 tb Dried rosemary
1 1/2 ts Dried rubbed sage
1/4 c Olive oil
2 tb Chopped garlic
2 1 1/2-lb racks of lamb

Preheat oven to 400F. Combine first 5 ingredients in small bowl. Combine oil and garlic in another small bowl. Rub oil mixture over each lamb rack. Season generously with salt and pepper. Press 3 T spice mixture all over each lamb rack. Place lamb in baking pan. Roast until thermometer inserted into center registers 135F for medium-rare, about 20 minutes. Transfer lamb racks to platter and let stand 5 minutes.

Carve lamb into individual chops, arrange on platter and serve.
