Potato Nests

4 Bread slices
4 Potatoes; boiled, peeled and mashed (350 g)
Prepared mutton mince or boiled chopped vegetable filling as required
1 Egg; beaten
Salt and pepper to taste

USING a cookie cutter, cut roundels of bread and keep aside. Mix half the beaten egg with salt and pepper into mashed potato. Using a star nozzle, pipe a border at the edge of each bread roundel. Brush with the remaining beaten egg and bake in a hot oven at 200oC for ten minutes. Remove and fill with the prepared filling. Garnish as desired.
