Armenian Shashlik - Mutton Or Pork with Sumac

Armenian Shashlik
2 lb Mutton or Pork
2 Onions
2 tb Oil, olive
Bacon rind (optional)
2 tb Sumac
Tomatoes, quartered
2 tb Tarragon or basil or Coriander
Salt
Pepper


Cut meat into bite-sized pieces an season with salt and pepper. Sprinkle with the herbs. Slice the onions. Thread the meat and slices of onion alternately on skewers and leave in the refrigerator for 4 to 6 hours. Baste with oil or bacon rind and barbecue or grill. Serve with tomato slices and salad.
